Lemon Herb Salmon


Ingredients:

  • 4 salmon fillets

  • Salt and pepper

  • 2 lemons, zested and juiced

  • 2 cloves of garlic, minced

  • 2 tbsp olive oil

  • 1 tbsp chopped fresh thyme

  • 1 tbsp chopped fresh parsley

  • 1 tbsp chopped fresh basil

  • 1/4 tsp red pepper flakes (optional)

Directions:

  1. Preheat the oven to 425 degrees F (220 degrees C).

  2. Season the salmon fillets with salt and pepper. Place them on a baking sheet lined with parchment paper or aluminum foil.

  3. In a small bowl, mix the lemon zest, lemon juice, garlic, olive oil, thyme, parsley, basil and red pepper flakes (if using).

  4. Brush the lemon herb mixture over the salmon fillets.

  5. Bake the salmon in the oven for 12-15 minutes or until it is cooked through. The time will depend on the thickness of the fillets, so adjust accordingly.

  6. Garnish with additional herbs and lemon wedges before serving, if desired.
