Spinach and Feta Stuffed Chicken Breast


  • 4 boneless, skinless chicken breasts

  • Salt and pepper

  • 2 cups baby spinach

  • 1/4 cup crumbled feta cheese

  • 2 cloves of garlic, minced

  • 1 tbsp olive oil

  • 1 tsp lemon zest

  • 1 tbsp lemon juice


  1. Preheat the oven to 400 degrees F (200 degrees C).

  2. Butterfly the chicken breasts by slicing them horizontally to create a pocket. Season the chicken breasts with salt and pepper.

  3. In a skillet, heat the olive oil over medium heat. Add the garlic and cook until fragrant, about 1-2 minutes.

  4. Add the baby spinach and cook until wilted, about 2-3 minutes.

  5. Stir in the feta cheese, lemon zest, and lemon juice. Cook for 1 more minute.

  6. Stuff each chicken breast with the spinach and feta mixture and secure it with toothpicks.

  7. Place the chicken breasts on a baking sheet lined with parchment paper or aluminum foil.

  8. Bake the chicken for 20-25 minutes or until cooked through.
